Currently we are in the process of switching from a dairy operation to beef cattle. We have a beautiful young herd of Black Angus heifers started and a couple of nice steers that will be finishing off into early spring.
We will begin processing in Spring 2018 and taking orders for freezer meat by the side and by the quarter at that time.
Our next cycle of breeding will begin late spring 2018 where we will be crossing our Angus heifers with the Wagyu semen in our first artificial insemination efforts. With this mix, we will produce cattle with a lovely marbling and a more flavorful meat.
While crossing with the Wagyu line will slow the growth to maturity, we feel this will provide the best meat that we can produce, as well as, be safer for the livestock. The Wagyu have a lower birth weight than Angus, resulting in a smaller calf which is less stressful for both the calf and the mother.
Our cattle are all grass fed and finished with just a touch of grain. We do not heavy grain, our reasons for providing grain is not to change the growth weight. We are not in a hurry to finish them off and fatten them up to a slaughter weight. We grain as more of a social reason, think of it as giving your pet a treat… this makes them calmer and use to being around us and more timid during our handling.
